The Charmat Method - Preserved Freshness
Circo Prosecco is produced using the traditional Charmat method, also known as the Martinotti method. This process preserves the primary aromas of the Glera grape, resulting in a fresh, aromatic, and delicately fruity sparkling wine.
Winemaking Process
The pressed juice is stored in stainless steel tanks. After clarification, it is inoculated with selected yeasts and undergoes fermentation at a controlled temperature of 18°C. The winemaker carefully studies the blend to achieve the perfect base cuvée.
Second Fermentation
The base wine is filtered, and cane sugar and selected yeasts are added for the second fermentation in an autoclave (Charmat method) at a controlled temperature. This process creates the characteristic fine and persistent bubbles of Prosecco.
Sensory Profile
Bright straw-yellow sparkling wine with fine and persistent bubbles. Fresh aromas of green apple, pear, white flowers, and citrus notes. On the palate, it is light, fresh, and delicately fruity, with a clean and refreshing finish.
